A healthy, easy-to-make cold Japanese soba noodle recipe using buckwheat noodles, lots of fresh ingredients, and a simple Asian homemade dressing. This light vegetarian- and vegan-friendly dish makes for a perfect lunch.

Soba Viet Salad instructions

Made this salad with a couple changes to reduce sodium and increase savoriness: doubled the amount of soba noodles, substituted coco aminos for the soy sauce, omitted the honey and brussel sprouts, doubled the ginger.
