  7. It's 100 g of pancetta.
  8. It's 20 g of grated Parmesan.

  1. Mix flour and baking powder. Add butter and rub with fingers to get breadcrumb texture. Set a side.
  2. Cook pancetta, no oil, drain and set a side.
  3. Mix egg, milk and oil with a fork.
  4. Gently add egg mix until you get a sticky consistency. Add pancetta and Parmesan. Mix again.

To use up the ingredients I decided to try making pancetta and parmesan scones. In a frying pan cook the pancetta until it goes crispy. In a jug beat the milk and the two eggs together and then add it to the mixture. With a wooden spoon pull the mixture together until it forms a soft dough. Fry the pancetta in a skillet to get nice and crispy and browned, then drain on a paper towel and cut into small pieces then set aside.
