Tuvar Dhokli. Tuvar Ma Dhokli is a one-pot dish made from sukhi or dry tuvar. The tuvar is cooked and simmered with whole wheat flour sheet (dhokli) and spices. I first ate Tuvar ma dhokli after my marriage at my Aunt-in-law's place (Daxa Shah) in Bharuch, Gujarat.

Ingredients of Tuvar Dhokli
- Lets Go Prepare of For Dhokli:- 1 cup wheat flour/aata.

The combination of dhokli with guvar along with some simple Gujarati spices is simple amazing. This Guvar Dhokli is prepared in pressure cooker, if you want you can also prepare in kadhai. In a large bowl or parat, mix all the ingredients except water listed under the Dhokli ingredients and knead to a semi-stiff dough. The dough should to be neither too hard nor too soft.
Tuvar Dhokli instructions
- For Dhokli:- Mix all ingredients with a little oil and make a stiff dough with water. And keep aside..
- For gravy:- heat oil in a pan add ajwain seeds and then add ginger garlic green chilli paste and saute for seconds..
- Then add tuvar dana or your choice vegetable and saute. Add all masala and add 6-7 cups of water and mix well..
- When water is boiled in mean time prepare Dhokli. Once again knead a dough and roll out in to round roti.
- Cut the docs into diamonds or squares with a knife and drop them in the boiling gravy mixture..
- Also make sure to add Dhokli few at a time. When all the flour pieces are put in boil gravy for a further 15 minutes on a low fire..
- Garnish with coriander leaves and lemon juice. And serve hot with Puri..
In Rajasthani dal dhokli, dumplings are shaped into small discs using spiced dough. Whereas, in Gujarati Dal dhokli, rolled dough squares are used as dumplings. Gujarati Dal Dhokli is made with 'Split Pigeon Pea' aka Toor(Tuvar)/Arhar Dal (Gujarati khatti meethi dal).
