Ingredients of Hokaido Squash Patties
- It's 500 grams of peeled hokaido squash (sweet potatoes would work too).
- Lets Go Prepare 500 grams of chickpeas, canned and drained.
- It's 1 tbsp of or two of flour plus more for rolling.
- Lets Go Prepare 1 of squeeze tomato paste.
- Lets Go Prepare 1 of salt, pepper, garlic and paprika.
- Lets Go Prepare 2 tbsp of olive oil.
Hokaido Squash Patties instructions
- Put the squash in a food processor and blitz it up (or you can grate it). Transfer it to a big bowl.
- Then, put chickpeas in the food processor and process until chickpeas reach almost like a hummus consistency. Add in flour and seasoning. Then transfer to the same bowl as the squash.
- Mix it all well together. Next, flour your hands and roll the mixture into patties, then roll them in some flour. Put the patties on a tray lined with parchment paper.
- Then, brush the patties with some olive oil on one side only and sprinkle with salt. Put the tray in an oven preheated to 220°C for about 15 minutes.
- After 15 minutes, flip the patties and brush the dry side with olive oil. Put them in the oven for 15 additional minutes.
