- Firstly roast the baigan/ eggplant on hop/ gas than remove its skin.. Let it cool than mashed it and keep aside...
- Now take a pan heat oil add cumin seeds, asefetida, green chillies, grated ginger saute it for 5-7 seconds and add onion till transparent than add tamatoes, salt, red chilli powder, turmeric powder, coriander powder mix all of them very nicely and saute it till it starts leaving oil...
- Now add the mashed baigan and mix well than add the peas mix it cover the pan let it cook for 7-8 minutes...
- When it starts becoming little thick add amchur powder mix it switch off the flame and cover it for 3-4 minutes.. Baigan Ka bharta is ready...
