Punjabi Dahi ka baingan instructions
- In a wok or pan add 1 spoon mustard oil (pre heated) shallow fry long sliced potato and aubergine. Take out when 80% done..
- Meanwhile in a small bowl add 5 spoon water, all the dry masalas, mix them well and keep aside for 15 mins. Keep chopped onion garlic and ginger ready..
- In the same wok heat mustard oil add chopped green chillies with onion garlic and ginger. Allow them to change their colour to golden brown, add grtaed tomato, mix them and let it cook till it leaves it's oil..
- In the water masala mixture add curd give a quick mix and cook this mixture with onion tomato in the wok. As shown in the picture..
- Add shallow fried veggies into it, cook till soft or fully cooked covering with a lid. Once done take out in your serving dish, garnish with green coriander leaves and serve hot. Done!!!.
