  2. What You needis 3-4 of Tomatoes.

Baingan Ka Bharta (Punjabi Style) step by step

  1. Wash Bengan Properly..
  2. Now turn on the gas & keep it on low flame..
  3. Keep 1 Bengan on it & roast it on all side till it starts shrinking & its colour changes into black brown in colour..
  4. After 5-7 minutes, when first Bengan roasted properly, then keep another Bengan on flame & roast it till shrinking & black brown colour..
  5. Again after 5-7 minutes, turn off the flame & let them cool down properly..
  6. After some time, peel off their skin, wash inside mixture properly & mash it properly..
  7. Chop Onions very finely & grind tomatoes, green chillies & 1 Table Spoon Ginger Garlic Paste finely into purée in a mixture grinder..

  9. Now take a kadhai, add 4 Table Spoon Desi Ghee in it & keep the gas on medium flame..
  10. When desi ghee gets heated up, add 1 area Spoon Jeera in it & let them sizzle..
  11. When Jeera starts sizzling, add add finely chopped onions in it & cook them till they become translucent/ soft don’t cook them till golden brown colour because in Punjabi masala onions are soft..

  13. After 2-3 minutes when onions become soft add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly..
  14. After 4-5 minutes, when oil is completely released add mashed Bengan mixture in mix it properly..
  15. Now add spices mix in it & roast both of them for 5-6 minutes so that all the moisture present in mixture gets evaporated or depleted..
  16. After 5-6 minutes, when ghee & moisture gets depleted properly turn off the flame..
  17. Your Bengan Ka Bharta is ready to be served..
